Now, I don’t know about you but tuna is my personal favourite fish. I live for cold tuna sandwiches! Gosh, my mouth is watering by just the thought of it. If the mix is made the right way with a good slice of cheese, my word can it be heavenly!
So recently, I tried out an alternate to a cold tuna sandwich. I removed the carbs and made a tuna salad, which was deelish! So colourful to look at and just as pleasing to them taste buds.
I didn’t plan on making a blogpost on this, hence the lack of professional pictures. These are just from my #whatieatinaday that I do on my Instagram Stories. But since it’s such a dear dish of mine and is pretty healthy, I figured some of you might be interested in the recipe. Plus, it is so quick and easy to prepare!
- 1 Tin of tuna – any kind you like. I prefer the one soaked in Olive oil.
- 1 ½ tbsp Mayonnaise
- A pinch of salt
- A handful of olives – sliced and chopped small
- 1 small onion chopped
- Parsley or coriander leaves – chopped
- Sliced cheese
- Tomato (feel free to add more greens as per your liking)
In a medium sized bowl, empty the tuna can and mix until tuna is in fine shreds.
Mix in the mayonnaise and salt.
Chop up your onion, olives and parsley/coriander leaves. Add to the mixture.
Feel free to add hot sauce at this point if you prefer.
Chop up your salad however you like and assemble.
Top up with cheese and ketchup. (I forgot to add cheese until after I started eating, which explains why you can’t see it in the pictures.
If you prefer a sandwich, use the same mixture with bread of your choice. Add lettuce and cheese with a dip of ketchup/hot sauce and you’re good to go!
